Ingredients for the cake
- 1 1/3 Cup cooked sweet potatoes
- 1 Cup water
- 1 and 1/2 Cups dates
- 1 Cup water
- 2 tsp Vanilla essence
- 1 1/2 Cup green banana flour (or almond flora or other available)
- 1/2 Cup sweet potato or oat flour
- 1/2 Cup cocoa powder
- 1 Tbs baking soda
- 1tsp baking powder
Ingredients for the frosting
- 2 Cups soaked cashews
- 1 Cup nut milk
- 4Tbs Cocoa powder
- 1tsp Vanilla essence
- 9 Dates
Method to make the cake
- Blend all cake wet ingredients
- Mix all cake dry ingredients
- Mix the 2 mixture together
Method for frosting
- Place all frosting ingredients in a blender and mix until smooth
- Keep in refrigerator until the cakes are cooked
Let the cakes cool and layer the frosting on one cake. Then add the other cake on top to make a layer cake.
I often make only one cake and have it simply with the frosting on top
Bake for 30 min in oven 4.
