Ingredients
BUTTERNUT MIX
- 2 small softly baked butter nuts. Flesh scooped out
- 5 dates
- 2Tbs maple syrup
- 1 Tbs 100% cacao nibs or 90% chocolate pieces
- 1/2 Cup oats or home made muesli
- 1tsp cinnamon
- 2 to 3Tbs coconut sugar or xylitol
- Coconut oil about 1/4 cup
CHOCOLATE LAYER
- Pure coco powder 1/2 Cup
- Melted coconut oil just enough to mix with coco powder
- Optional 2 Tbs maple syrup (I dont use it but you can add for guests and children).
Method
- Blend all the butternut mix ingredients (except the nibs) until smooth. Use a blender or food processor or by hand can work as well
- Add cacao nibs or chocolate pieces / chips and fold
- Mix the coco powder, melted coconut oil and maple syrup
- Place a thin layer of choc mixture in muffin moulds
- Pour in the butternut mix so the chocolate comes up the sides
- Add a dot of melted chocolate on top
- Place in the deep freezer and keep in there
Take out 10 min before eating to enjoy soft ad creamy
