SALAD CREAM / MAYONNAISE

Ingredients

  • 2 Cups washed/soaked cashew nuts
  • 1 Cup water (or less if you want thicker and more creamy)
  • 1/2 cup Apple cider vinegar 
  • 1/4 Cup Olive oil
  • 1 Tbsp Honey or maple syrup for vegan option
  • 2 Tbsp unsweetened French Dijon mustard
  • 1tsp salt (or no salt if you are off salt)
  • Optional 1/2 garlic 
  • Optional parsley. 

Method

  • Blend all ingredients in high speed blender until smooth and creamy

PERFECT TO USE ON COLE SLOW, SALADS, OR AS A DIP WITH ADDED HERBS OR GARLIC
